My Fruitive Challenge: Day 127 — WFPB Brownie



I was ready to make these brownies late last night, but didn’t want to take time to look for this particular recipe. 

Here’s the very similar ChatGPT’s version I used:

### Ingredients:

- 2 medium sweet potatoes (about 1½ cups mashed)

- ½ cup cocoa powder (unsweetened)

- ½ cup nut butter (almond, peanut, or cashew)

- ¼ cup maple syrup (adjust for sweetness)

- 1 tsp vanilla extract (optional)

- ½ tsp baking powder (optional for a slight lift)

- Pinch of salt (optional)

### Instructions:

1. **Prepare the Sweet Potatoes**:

   - Peel and chop the sweet potatoes into small cubes.

   - Boil, steam, or microwave them until soft (around 10-15 minutes for boiling).

   - Mash them thoroughly until smooth.

2. **Preheat the Air Fryer**: Set your air fryer to 320°F (160°C) and let it preheat for a few minutes.

3. **Mix the Ingredients**:

   - In a bowl, combine the mashed sweet potatoes, cocoa powder, nut butter, maple syrup, vanilla extract (if using), baking powder (optional), and a pinch of salt.

   - Stir the mixture until it's smooth and well-blended.

- **Thickness**: Depending on the size of your air fryer, the batter may be thicker or thinner, so adjust the cooking time if needed.

- **Batch Cooking**: If you have a small air fryer, you may need to cook the brownies in two batches.

This air fryer method gives you a faster bake time while keeping the brownies moist and fudgy!

Deeeelicious! I knew it would be based on the tasty batter. The true test was my wife and kids appreciating it. 

Yes, they approved! 

Although my wife said that next time to not tell her I used sweet potatoes.
